If your wheels are NOT quick release, you should be okay with just the u-lock. You'll be spending 5-10 minutes inside each checkpoint store. You will also need to keep your receipts. They are normal markets and won't hurry just cause you are in the middle of a race. Lock at your own discretion. I think it's 15 miles or so depending on the route you choose.
